想 expresses a wish, desire, or something you feel like doing — soft and optional. 要 expresses a stronger intention, a plan, or a necessity — more committed. Both come before the main verb. Negation: 不想 (don't want to) and 不要 (don't want to / don't — used as a command too).

想 (xiǎng) expresses a DESIRE or WISH — something you feel like doing or would love to do. It carries a soft, optional feeling: 我想吃火锅 (I feel like eating hotpot — it would be nice), 我想去旅游 (I'd like to travel). 想 can also mean 'to miss (someone)' when used without another verb: 我想你 (I miss you).
要 (yào) expresses a stronger INTENTION, PLAN, or NEED. It suggests commitment or that you intend to make it happen: 我要去买菜 (I'm going to buy groceries — it's planned), 你要好好吃饭 (You need to eat properly — there's an obligation). In some contexts, 要 also means 'to need/want' as a full verb: 我要一杯水 (I want/need a glass of water).
Key contrast: 想 is about what you FEEL LIKE doing. 要 is about what you INTEND or NEED to do. They can both appear in the same sentence: 我想去,但我要先做作业 (I want to go, but I need to finish my homework first).
Negation: 不想 = don't feel like / don't want to. 不要 = don't want to; also used as a command meaning 'don't!' (不要说话!= Don't talk!). This is different from 不用 (no need to).
Do NOT confuse 要 (want/plan) with 要…了 (expressing something is about to happen, covered in later lessons).
